We all love a glass of Prosecco or Champers! Who in their right mind doesn’t?

But when it comes to toasting your nuptials, we’re the kind who’d want to kick it off with a little more Shazam.

We have provided recommendations for brands of alcohol, but it’s your wedding and you all have a budget to stick to – so be experimental.

(We don’t get paid by these brands for recommendations btw, everything we write is purely our honest opinion)

So, here are our top 5 DIY Prosecco welcome cocktails for the rebellious bride.

Spring wedding

Now this cheeky little tipple is so simple, prepare ahead, serve and make a stylish statement at your reception.

It’s a simplistic twist on your glass of Prosecco, with the mint and elderflower flavours making it perfect for any spring/summer Wedding.

You can also make it extra boozy by adding a shot of gin.

(recommendation: Bloom Gin, but believe it or not Aldi’s Oliver Cromwell London Dry Gin won a gold medal in 2017 and costs less than a tenner).

Here’s a simple recipe for you to use:

  • 25ml (single shot) of Gin
  • A glass half-filled with ice
  • Good splash of elderflower cordial
  • Several mint leaves (give them a slap to release the taste)
  • Lime wedge
  • Champagne or Prosecco
  • Soda water

Pour a measure of gin into a glass half-filled with ice, then add a good splash of elderflower cordial.

Tuck in several slapped mint leaves, squeeze over a lime wedge and drop it in. Top up with Prosecco, adding a splash of soda water – serve immediately!

Old Fashioned 

Winter wedding 

An Old Fashioned is one of our all-time favourite cocktails.

Harking back to prohibition days this cocktail really packs a punch, well the only mixer in it is ice, the rest is whisky (you know we love whisky)!

We’ve discovered this amazing Prosecco twist to this classic tipple.

Ahead of your festivities prepare your blend of whisky, dash of Angostura bitters, orange rind and simple syrup.

We suggest using a rye whisky because it’s more traditional, less sweet and has a slightly sharper taste to it.

When it comes time to serve, place a brown sugar cube at the bottom of the champagne flute, fill the glass half way up with your whisky blend then top off with something sparkling and a slice of orange rind.

This woody, dry and smoky number is a real primal twist on your standard glass of champers.

Here’s what you’ll need to buy:

  • Brown sugar cubes
  • Simple syrup (see below)
  • Bitters (recommendation: Angostura)
  • 50ml (double shot) Rye Whisky (recommendation: Wild Turkey)
  • Champagne or Prosecco

Old Fashioned

Gin Bramble

Gin and blackberries. Could you get anymore British than this?

A sweet and fruity Bramble is always a go to on a hot summers day, and we just love the colour of blackberries.

Another sparkling cocktail which is easy to make ahead of time, just pre-mix your gin, crème de cassis, lemon juice and simple syrup.

Then when the time arrives, just serve in a chilled glass topped off with something bubbly.

Add a dash of ice and a ripe blackberry (you can pick these almost anywhere in the summer – a neighbour put her hand over the fence in to our garden to pick some the other day!)

Delicious.

Make sure you add these bits to your shopping list:

  • 50ml (double shot) Gin
  • 1/2 shot Crème de Cassis
  • 25ml (single shot) Freshly squeezed lemon juice
  • 1/2 shot Simple Syrup (See below)
  • Blackberries (Fresh or frozen)
  • Champagne or Prosecco

Aperol Spritz

Autumn wedding 

This venetian aperitif’s popularity is spreading like wildfire.

The warm colours are on fleek for an autumn wedding.

This simple 3-ingredient cocktail has a fresh, bitter edge and is served traditionally in a tumbler with a slice of orange, but you may have seen it served in a large wine glass.

Aperol is a bright orange aperitif that packs a punch in taste and vibrancy, its main flavours are bitter and sweet oranges and herbs (Including rhubarb).

Here’s what you need to get on your list:

  1. Prosecco
  2. 50ml (double shot) Aperol
  3. Soda Water
  4. Oranges

Pomegranate & Grapefruit Fizz

Any time of the year wedding! 

This fizzy number is a perfect pink blush cocktail!

The jewelled pomegranate seeds floating in the grapefruit and Prosecco infusion is a refreshing and stylish drink.

Simply pour a generous amount of grapefruit juice in to the bottom of a glass and fill to the top with Prosecco. Finish the drink with a sprinkle of pomegranate seeds.

If you really want to ramp up the flavours (and the alcohol content) you can add a dash of Pink Grapefruit Vodka (recommendation: Belvedere)  to give it that extra kick.

Simple Syrup 

How to make a simple syrup.

It is literally:

1 cup Sugar

1 cup Water

In a small saucepan, bring sugar and water to a boil; simmer until the sugar is dissolved (approximately 3 minutes). Done.

You have to let the mixture cool completely.

It can be stored in a glass jar for up to a month or frozen.

You can add flavours to your syrup to make drinks more interesting (such as cinnamon, lavender, lemon etc. but thats for another blog).

Odd Tips

1. Want to make your drinks sparkle?

Add edible glitter in the colour of your choice.

2. Name your cocktails after the Bride, Groom, Usher, Bridesmaid… you catch our drift.

3. Use any form of cup, glass, metal container you like to serve your drinks from – it doesn’t always have to be a flute (they break easily).
